Unlike plain nan, garlic nan bread is uses not only plain flour, water, yeast and salt but is also laced with garlic paste. The bread is then cooked in a tandoori clay oven where it is baked at high temperature with the inside of the bread being in contact with the heated clay, giving the bread a distinctive rustic, look, feel and taste.
